Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 lb chicken breast cut into pieces
  • 1/2 lb shrimp peeled and deveined
  • 1/2 lb smoked sausage sliced
  • 1 bell pepper chopped
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Spread rice and vegetables on a sheet pan.
  3. Add chicken and sausage.
  4. Pour broth and seasoning over everything.
  5. Cover with foil and bake for 25–30 minutes.
  6. Add shrimp and mix.
  7. Bake uncovered for 8–10 minutes.
  8. Let rest, fluff, and serve.

Notes

  • Keep rice covered while baking
  • Add shrimp at the end
  • Adjust seasoning to taste
