In a large bowl, combine flour, instant yeast, sugar, and salt.
Add warm water and olive oil. Mix until a soft dough forms.
Knead the dough for 6–8 minutes until smooth and elastic. Cover and let rest for 10–15 minutes until slightly puffy.
Roll dough into a rectangle on a lightly floured surface. Cut into even strips and gently stretch into breadstick shapes.
Place breadsticks on a parchment-lined baking sheet.
In a small bowl, mix melted butter, minced garlic, Italian seasoning, and salt.
Brush half of the garlic butter mixture over the breadsticks.
Bake in a preheated oven at 400°F (200°C) for 12–15 minutes, or until lightly golden.
Remove from the oven, brush with remaining garlic butter, and sprinkle with parmesan if using.
Serve warm.
