Ingredients
  

  • 4 chicken cutlets or thin-sliced chicken breasts
  • 1 cup breadcrumbs or panko
  • 1/2 cup grated parmesan cheese optional
  • 2 large eggs
  • 2 tablespoons olive oil or cooking spray
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Season chicken cutlets lightly with salt and pepper.
  3. Beat eggs in a shallow bowl.
  4. Combine breadcrumbs, parmesan, and Italian seasoning in another bowl.
  5. Dip each cutlet in egg, then coat evenly with breadcrumb mixture.
  6. Place cutlets on baking sheet and lightly drizzle or spray with oil.
  7. Bake for 10 minutes, flip, then bake another 8–10 minutes until golden.
  8. Remove from oven and rest briefly before serving.

Notes

  • Panko breadcrumbs create extra crunch
  • Flip halfway for even browning
  • Best reheated in oven or air fryer
