Ingredients
  

  • pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 bell peppers sliced
  • 1 large onion sliced
  • 2 tablespoons fajita seasoning
  • Salt and black pepper to taste
  • 1 tablespoon lime juice optional

Method
 

  1. Slice chicken into strips and season with fajita seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken until browned and cooked through; remove from skillet.
  4. Add peppers and onions to the same skillet and sauté until tender.
  5. Return chicken to skillet and toss everything together.
  6. Cook 2–3 minutes until flavors combine.
  7. Finish with lime juice if using and serve warm.

Notes

  • Chicken thighs can be substituted for breasts
  • Adjust seasoning to taste
  • Great served with rice or tortillas
