Method
- Line a tray with parchment.
- In a saucepan, combine butter, sugar, milk, lemon zest, lemon juice, and salt. Stir and bring to a boil for 1 minute.
- Remove from heat, stir in vanilla and oats.
- Fold in optional ingredients.
- Drop onto tray in spoonfuls. Let cool and set.
Notes
- Use fresh lemon juice for best results
- Store in airtight container at room temp or fridge
