Ingredients
  

  • 2 cans tuna in oil or water, drained
  • 4 large eggs
  • 1/2 lb small potatoes
  • 1 cup green beans
  • 1 cup cherry tomatoes
  • 1/2 cup olives
  • 4 cups mixed greens
Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • Salt and pepper to taste

Method
 

  1. Boil eggs, cool, peel, and slice.
  2. Cook potatoes until tender, then slice.
  3. Blanch green beans briefly and cool.
  4. Arrange greens on a plate.
  5. Add potatoes, beans, tomatoes, olives, eggs, and tuna.
  6. Whisk dressing ingredients together.
  7. Drizzle dressing over salad and serve.
