Ingredients
  

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels optional
  • 1 avocado diced
  • ½ cup shredded cheddar or Mexican-blend cheese
  • cup sour cream or Greek yogurt
  • 1 –2 tablespoons milk or water to thin

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it apart, until browned.
  3. Stir in taco seasoning and cook until fragrant and no liquid remains.
  4. Add lettuce to a large bowl and top with tomatoes, beans, corn, and avocado.
  5. Spoon warm turkey over the salad.
  6. Drizzle with dressing if using and toss gently before serving.
