Strawberry Cheesecake Poke Cake

A creamy, fruity poke cake made with boxed mix, cheesecake pudding, and strawberry topping. Super easy and always a crowd-pleaser.

Ingredients
  

  • 1 box white or yellow cake mix (+ ingredients on box)
  • 1 (3.4 oz) box instant cheesecake pudding mix
  • 2 cups cold milk
  • 1 tub (8 oz) whipped topping (like Cool Whip)
  • 1 cup strawberry pie filling OR diced strawberries
  • Optional: 4 oz cream cheese, softened
  • Optional: ½ cup crushed graham crackers

Method
 

  1. Prepare cake mix per box instructions. Bake in a greased 9x13 pan. Let cool 15 minutes.
  2. Poke holes all over cake with the handle of a wooden spoon.
  3. In a bowl, whisk together pudding mix and cold milk (add cream cheese if using) until slightly thickened.
  4. Pour pudding mixture over cake, spreading to fill holes. Chill for 1 hour.
  5. Spread whipped topping over pudding layer.
  6. Add strawberry pie filling or fresh strawberries on top.
  7. Garnish with crushed graham crackers. Chill another hour before serving.

Notes

- Chill longer for a firmer set.
- Use stabilized whipped cream if making from scratch.
- Great make-ahead dessert!
