Ingredients
  

For the Salad
  • 1 lb shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 2 avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
For the Lime Dressing
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
  3. In a large bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
  5. Add cooked shrimp to the bowl with the vegetables.
  6. Pour the lime dressing over the salad and gently toss to combine.
  7. Serve immediately with extra lime wedges if desired.

Notes

  • Add diced jalapeño for a spicy version.
  • Serve over greens for a larger salad meal.
  • Add mango or pineapple for a tropical twist.
