Method
- Heat olive oil in a skillet over medium heat.
- Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
- In a large bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
- Add cooked shrimp to the bowl with the vegetables.
- Pour the lime dressing over the salad and gently toss to combine.
- Serve immediately with extra lime wedges if desired.
Notes
- Add diced jalapeño for a spicy version.
- Serve over greens for a larger salad meal.
- Add mango or pineapple for a tropical twist.
