Method
- Preheat oven to 425°F (220°C).
- Soak wooden skewers in water for 20 minutes.
- Toss vegetables with olive oil and seasonings.
- Thread vegetables onto skewers evenly.
- Place skewers on a lined baking sheet.
- Roast 12 minutes, flip, then roast 10–13 more minutes until tender.
- Remove and serve warm or at room temperature.
