Ingredients
  

  • 1 bell pepper cut into chunks
  • 1 zucchini sliced thick
  • 1 red onion cut into wedges
  • 1 cup mushrooms
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Soak wooden skewers in water for 20 minutes.
  3. Toss vegetables with olive oil and seasonings.
  4. Thread vegetables onto skewers evenly.
  5. Place skewers on a lined baking sheet.
  6. Roast 12 minutes, flip, then roast 10–13 more minutes until tender.
  7. Remove and serve warm or at room temperature.

Notes

  • Cut vegetables evenly
  • Don’t overcrowd skewers
  • Roast at high heat for best flavor
