Method
- Preheat oven to 220°C (425°F).
- Toss cauliflower with oil, salt, pepper, and paprika.
- Spread on a baking sheet and roast for 20–25 minutes until golden.
- In a bowl, whisk dressing ingredients together.
- Add greens, cucumber, onion, and parsley to a large bowl.
- Add warm roasted cauliflower.
- Drizzle dressing and toss gently.
- Serve immediately or slightly warm.
