Method
- Beat cream cheese, maple syrup, sugar, and egg yolk until smooth. Set aside.
- In one bowl, whisk pumpkin puree, eggs, oil, vanilla, and brown sugar.
- In another bowl, combine flour, baking soda, salt, and spices.
- Fold dry ingredients into wet ingredients until just mixed.
- Pour half the batter into a lined loaf pan, spread cream cheese mixture on top, then cover with remaining batter.
- Bake at 350°F (175°C) for 55–65 minutes, covering with foil if needed.
- Cool completely before slicing.
Notes
- Swap maple syrup with honey if preferred.
- Add chopped pecans or walnuts to the batter for crunch.
- This bread tastes even better the next day as flavors meld.
