Pesto Pasta Salad

Ingredients
  

  • 12 oz pasta fusilli or penne
  • 1/2 cup basil pesto
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls or cubes
  • 1/2 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Method
 

  1. Cook pasta in salted water until al dente. Drain and cool.
  2. Transfer cooled pasta to a large bowl.
  3. Add pesto and toss to coat evenly.
  4. Add tomatoes, mozzarella, cucumber, and onion.
  5. Drizzle olive oil and lemon juice.
  6. Toss gently to combine.
  7. Chill for 20–30 minutes before serving.
  8. Toss again and adjust seasoning before serving.

Notes

  • Add extra pesto if needed before serving
  • Use fresh basil for garnish if available
  • Best served chilled
