Method
- Line a baking sheet with parchment paper.
- In a saucepan, heat sugar and corn syrup until dissolved and bubbly.
- Remove from heat and stir in peanut butter until smooth.
- Pour mixture over cornflakes in a large bowl. Stir gently to coat.
- Drop spoonfuls onto prepared sheet. Let cool until firm.
Notes
- Use crunchy peanut butter for extra texture.
- Add mini chocolate chips or drizzle with melted chocolate for variation.
- Don’t overboil the sugar syrup or cookies will turn hard.
