Ingredients
  

  • 2 cans 15 oz each chickpeas, drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ½ cup feta cheese crumbled (optional)
  • ¼ cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Add chickpeas to a large mixing bowl.
  2. Add cucumber, tomatoes, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  4. Pour dressing over salad and toss gently until evenly coated.
  5. Add feta if using and gently fold in.
  6. Let rest for 10 minutes before serving.
