Ingredients
  

  • 1 cup oat flour or blend rolled oats into flour
  • 1/2 cup vanilla protein powder
  • 1/3 cup almond butter or peanut butter
  • 2 tbsp honey or maple syrup
  • 2 –4 tbsp milk as needed, any kind
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/3 cup dried blueberries best for texture
  • Pinch of salt

Method
 

  1. Mix dry: In a bowl, stir oat flour, protein powder, and salt until evenly combined.
  2. Add binders: Mix in almond butter and honey until thick and crumbly.
  3. Add lemon: Stir in lemon zest and lemon juice.
  4. Fix texture: Add milk 1 tbsp at a time until a soft dough forms (not sticky).
  5. Add blueberries: Fold in dried blueberries gently.
  6. Roll: Scoop and roll into 12 balls.
  7. Chill: Refrigerate 20–30 minutes to firm up.

Notes

  • Best blueberry option: Dried blueberries hold shape and keep the dough firm.
  • If dough is too dry, add 1 tbsp milk. If too sticky, chill 10 minutes then roll.
  • For a stronger lemon punch, add 2–3 drops lemon extract (optional).
