- Mix dry: In a bowl, stir oat flour, protein powder, and salt until evenly combined.
- Add binders: Mix in almond butter and honey until thick and crumbly.
- Add lemon: Stir in lemon zest and lemon juice.
- Fix texture: Add milk 1 tbsp at a time until a soft dough forms (not sticky).
- Add blueberries: Fold in dried blueberries gently.
- Roll: Scoop and roll into 12 balls.
- Chill: Refrigerate 20–30 minutes to firm up.
Notes
- Best blueberry option: Dried blueberries hold shape and keep the dough firm.
- If dough is too dry, add 1 tbsp milk. If too sticky, chill 10 minutes then roll.
- For a stronger lemon punch, add 2–3 drops lemon extract (optional).
