Ingredients
  

  • ½ cup unsalted butter
  • cup light brown sugar packed
  • 2 tbsp light corn syrup or honey
  • 1 tsp vanilla extract
  • cup rolled oats or finely chopped almonds
  • ¼ cup all-purpose flour
  • Pinch of salt
  • ¾ cup semi-sweet or dark chocolate for filling

Method
 

  1. In a saucepan, melt butter, brown sugar, and corn syrup. Stir until smooth.
  2. Remove from heat. Stir in vanilla, oats, flour, and salt. Let cool 5–10 minutes.
  3. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  4. Drop ½ tsp batter spaced widely apart. Bake 5–7 minutes until golden and lacy.
  5. Cool slightly, then transfer to rack.
  6. Melt chocolate and spread on one cookie; top with another. Let set.

Notes

These spread a lot, so bake in batches and give plenty of space on the tray.
