Method
- In a saucepan, melt butter, brown sugar, and corn syrup. Stir until smooth.
- Remove from heat. Stir in vanilla, oats, flour, and salt. Let cool 5–10 minutes.
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- Drop ½ tsp batter spaced widely apart. Bake 5–7 minutes until golden and lacy.
- Cool slightly, then transfer to rack.
- Melt chocolate and spread on one cookie; top with another. Let set.
Notes
These spread a lot, so bake in batches and give plenty of space on the tray.
