Ingredients
  

  • lb chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes chopped (oil-packed, drained)
  • 2 cups fresh spinach
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili flakes optional

Method
 

  1. Season chicken and sear in a skillet until golden. Remove and set aside.
  2. Sauté garlic in the same pan, then deglaze with broth.
  3. Stir in cream and parmesan and simmer until slightly thickened.
  4. Add spinach and let wilt.
  5. Return chicken to the pan and simmer until cooked through.
  6. Adjust seasoning and serve.

Notes

  • Chicken thighs stay juicier than breasts
  • Add sun-dried tomatoes for a classic Tuscan twist
  • Sauce thickens as it cools
