Ingredients
  

  • lb chicken breast
  • 8 oz mushrooms sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Method
 

  1. Season chicken with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Cook chicken until golden and cooked through. Remove and set aside.
  4. Add mushrooms to the skillet and cook until golden.
  5. Stir in garlic and cook briefly.
  6. Lower heat and add heavy cream and cream cheese. Stir until smooth.
  7. Add parmesan and Italian seasoning and simmer until thickened.
  8. Return chicken to the skillet and simmer for 3 to 5 minutes. Serve hot.

Notes

  • Use fresh mushrooms for best texture
  • Do not boil the sauce
