Ingredients
  

  • 1 lb white fish cod or tilapia, cut into chunks
  • 1 cup full-fat coconut milk
  • 1 tablespoon oil or butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon curry powder or paste
  • 1 tablespoon lime juice fresh
  • Salt and pepper to taste
  • Optional: chili flakes cilantro

Method
 

  1. Season fish lightly with salt and spices.
  2. Heat oil in a pan and sauté onion, garlic, and ginger.
  3. Add curry powder and cook briefly.
  4. Pour in coconut milk and simmer.
  5. Add fish and cook gently for 6–8 minutes.
  6. Stir in lime juice and adjust seasoning.
  7. Serve warm with low-carb sides.
