Method
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken until browned and fully cooked. Remove and set aside.
- Add vegetables to the pan and stir-fry until just tender.
- Add garlic and ginger and cook briefly.
- Return chicken to the pan and stir in soy sauce, sesame oil, and vinegar.
- Toss well and cook for 2 to 3 minutes until heated through. Serve hot.
Notes
- Slice chicken thin for faster cooking
- Coconut aminos are a great soy-free option
- Best served fresh but reheats well
