Ingredients
  

  • lb chicken breast or thighs sliced
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • ¼ cup soy sauce or coconut aminos
  • 1 tsp sesame oil
  • 1 tbsp apple cider vinegar
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Cook chicken until browned and fully cooked. Remove and set aside.
  3. Add vegetables to the pan and stir-fry until just tender.
  4. Add garlic and ginger and cook briefly.
  5. Return chicken to the pan and stir in soy sauce, sesame oil, and vinegar.
  6. Toss well and cook for 2 to 3 minutes until heated through. Serve hot.

Notes

  • Slice chicken thin for faster cooking
  • Coconut aminos are a great soy-free option
  • Best served fresh but reheats well
