Ingredients
  

  • 3 cups cauliflower rice
  • 2 tablespoons oil
  • 2 cloves garlic minced
  • 2 eggs
  • ½ cup mixed low-carb vegetables
  • 2 tablespoons soy sauce or coconut aminos
  • Salt and pepper to taste
  • Optional: green onions sesame oil

Method
 

  1. Heat oil in a pan and sauté garlic.
  2. Add vegetables and cook briefly.
  3. Stir in cauliflower rice and cook on medium-high heat.
  4. Push to one side and scramble eggs.
  5. Mix everything together.
  6. Add soy sauce and stir well.
  7. Adjust seasoning and serve.

Notes

  • Dry cauliflower before cooking
  • Use high heat for best texture
  • Add protein for a complete meal
