Instant Pot Creamy Tuscan Chicken

Ingredients
  

  • 1.5 lbs chicken breasts or thighs
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup sun-dried tomatoes, chopped
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 2 cups baby spinach

Method
 

  1. Sauté chicken in olive oil, 2–3 mins per side. Remove.
  2. Sauté garlic, add broth, deglaze pot. Stir in tomatoes, seasoning.
  3. Return chicken. Pressure cook on high for 8 mins. Natural release 5 mins.
  4. Add cream, cheese, spinach. Sauté until thickened and spinach wilts.
  5. Serve with pasta, rice, or mashed potatoes.

Notes

  • Use thighs for more flavor; breasts for leaner option.
  • Deglaze well to avoid burn warning.
  • Simmer extra to thicken if needed.
