Method
- Sauté chicken in olive oil, 2–3 mins per side. Remove.
- Sauté garlic, add broth, deglaze pot. Stir in tomatoes, seasoning.
- Return chicken. Pressure cook on high for 8 mins. Natural release 5 mins.
- Add cream, cheese, spinach. Sauté until thickened and spinach wilts.
- Serve with pasta, rice, or mashed potatoes.
Notes
- Use thighs for more flavor; breasts for leaner option.
- Deglaze well to avoid burn warning.
- Simmer extra to thicken if needed.
