Ingredients
  

  • 1.5 lbs chicken thighs or breasts
  • 3 bell peppers (mixed colors), sliced
  • 1 large onion, sliced
  • 1 tbsp olive oil
  • 1 packet fajita seasoning (or 2 tbsp homemade)
  • 1/3 cup chicken broth
  • Juice of 1 lime
  • Tortillas + toppings (sour cream, cheese, guac, etc.)

Method
 

  1. Add chicken and fajita seasoning to the Instant Pot. Toss to coat.
  2. Add sliced onion and half the bell peppers.
  3. Pour in broth and lime juice. Seal and cook on High Pressure for 10 minutes.
  4. Naturally release for 5 minutes, then quick release.
  5. Add remaining bell peppers. Close the lid and let steam for 3–5 minutes.
  6. Slice or shred chicken. Serve hot with tortillas and toppings.

Notes

  • Use frozen chicken by increasing cook time to 12 minutes.
  • For extra flavor, top with fresh cilantro and lime wedges.
