Ingredients
  

  • 1 chicken carcass (or 2–3 lbs chicken bones)
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 5 garlic cloves, smashed
  • 2 bay leaves
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp peppercorns
  • Water (fill to max line)

Method
 

  1. Add bones, veggies, and all ingredients to Instant Pot.
  2. Fill with water to max line
  3. Pressure cook on high for 2 hours.
  4. Natural release (30–40 mins).
  5. Strain and store in fridge or freezer.

Notes

  • Use raw or roasted bones.
  • Optional: add ginger or fresh herbs for added flavor.
  • Great for sipping, soups, or cooking grains.
