Instant Pot Chicken and Rice

This simple one-pot Instant Pot chicken and rice recipe is creamy, comforting, and perfect for busy weeknights. Works great with chicken breasts or thighs.

Ingredients
  

  • 1.5 lbs boneless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp thyme or Italian seasoning
  • Optional: 1 cup frozen peas or mixed veggies

Method
 

  1. Sauté chicken in oil for 2–3 mins per side. Add onion and garlic.
  2. Add rice, broth, and seasonings. Stir and deglaze bottom.
  3. Pressure cook on high for 10 minutes. Natural release 10 mins.
  4. Shred chicken if needed. Stir in peas or veggies. Fluff and serve.

Notes

  • Use long-grain white rice only. Brown rice needs longer time.
  • Add sour cream or cheese after cooking for extra creaminess.
  • Frozen chicken breasts: cook 12 minutes on high.
