Method
- Sauté garlic and onion in olive oil for 2–3 mins.
- Add chicken, season with salt, pepper, and thyme. Sauté briefly.
- Add rinsed quinoa, broth, carrots, and broccoli (don’t stir veggies in).
- Seal lid and cook on high pressure for 1 minute. Natural release 10 mins, then quick release.
- Stir, taste, and finish with lemon or Parmesan if desired.
Notes
- Use fresh or frozen chicken—adjust cook time accordingly.
- Stir in spinach or cheese after cooking for extra nutrients or flavor.
