Materials

  • 1  lb chicken breast or thighs, diced
  • 1  tbsp olive oil
  • 1 tbsp butter
  • 4  garlic cloves, minced
  • 2 cups chicken broth
  • 2 cups heavy cream (or half-and-half)
  • 8 oz pasta (penne or rotini)
  • 1  cup grated Parmesan cheese
  • 1  tsp Italian seasoning
  • ½  tsp salt
  • ¼ tsp black pepper
  • Fresh parsley or basil (optional, for garnish)

Instructions

  • Set Instant Pot to Sauté. Heat olive oil and butter.
  • Add diced chicken. Sauté until lightly browned (3–4 minutes).
  • Stir in garlic and cook for 30 seconds.
  • Pour in chicken broth and heavy cream.
  • Add pasta and press it into the liquid (do not stir).
  • Close lid, seal, and cook on High Pressure for 6 minutes.
  • Quick release the pressure when done.
  • Stir in Parmesan cheese until creamy.
  • Garnish with fresh herbs if using and serve hot.

Notes

  • Add fresh spinach after cooking if you want extra greens.
  • Store leftovers in the fridge for up to 3 days.
Reheat with a splash of broth or milk to loosen the sauce.
