Ingredients
  

For the Salad
  • 2 chicken breasts cooked and sliced
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ red onion thinly sliced
  • ½ cup feta cheese crumbled
  • cup Kalamata olives
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Cook the chicken using your preferred method such as grilling, baking, or pan-searing. Allow it to rest before slicing.
  2. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, and red onion.
  3. Add sliced chicken on top of the vegetables.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  5. Drizzle the dressing over the salad.
  6. Add feta cheese and Kalamata olives.
  7. Toss gently and serve immediately.

Notes

  • Use grilled chicken for extra flavor.
  • Add quinoa or couscous to make the salad more filling.
  • Fresh lemon juice gives the best dressing flavor.
