Cuisine: American

Ingredients

  • 1 cup active sourdough starter
  • ¾ cup warm milk
  • cup sugar
  • 2 large eggs
  • 4 tbsp unsalted butter softened
  • 3 ½ cups all-purpose flour plus more for dusting
  • 1 tsp salt
  • Oil for frying
  • 2 cups powdered sugar
  • 3 –4 tbsp milk
  • 1 tsp vanilla extract

Method

  1. Mix starter, warm milk, sugar, eggs, butter, and flour. Knead until smooth.
  2. Let rise 4–6 hours at room temp (or overnight in fridge).
  3. Roll dough ½-inch thick, cut donuts, and place on lined baking sheet.
  4. Let rise again 1–2 hours until puffy.
  5. Heat oil to 350°F and fry donuts 1–2 minutes per side. Drain.
  6. Mix glaze ingredients until smooth, dip donuts, and let set.

Notes

  • Overnight fermentation makes them more flavorful.
  • Add spices (like cinnamon or nutmeg) to the dough for variation.
  • Can also bake at 375°F for 12–15 minutes for a lighter version (though frying gives best texture).
