Ingredients
  

  • 4 large eggs
  • 1 large avocado
  • 2 tablespoons Greek yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil optional
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley or cilantro chopped

Method
 

  1. Boil eggs until fully cooked, then cool and peel.
  2. Chop eggs into small pieces.
  3. Scoop and mash avocado lightly in a bowl.
  4. Add eggs to the avocado and mix gently.
  5. Stir in yogurt or mayo, lemon juice, and seasoning.
  6. Mix until combined but still slightly chunky.
  7. Garnish with herbs and serve immediately.
