  • 1 box 15.25 oz lemon cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tablespoon lemon juice freshly squeezed is best
  • 1 teaspoon lemon zest optional, for extra flavor
  • 1/2 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Rub lemon zest into sugar until fragrant.
  3. Cream butter and lemon sugar until fluffy.
  4. Add egg and lemon juice. Beat until combined.
  5. In a separate bowl, whisk dry ingredients. Add to wet and mix just until combined.
  6. Scoop dough into balls, roll in sugar, and place on baking sheet.
  7. Bake for 9–11 minutes. Let cool on pan for 5 minutes before transferring to a rack.

Notes

  • For a stronger lemon flavor, add ½ tsp lemon extract.
  • Chill dough for thicker cookies if desired.
