Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Rub lemon zest into sugar until fragrant.
- Cream butter and lemon sugar until fluffy.
- Add egg and lemon juice. Beat until combined.
- In a separate bowl, whisk dry ingredients. Add to wet and mix just until combined.
- Scoop dough into balls, roll in sugar, and place on baking sheet.
- Bake for 9–11 minutes. Let cool on pan for 5 minutes before transferring to a rack.
Notes
- For a stronger lemon flavor, add ½ tsp lemon extract.
- Chill dough for thicker cookies if desired.
