Creamy Tuscan Salmon

Ingredients
  

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning

Method
 

  1. Heat oil in a skillet over medium heat.
  2. Cook salmon 4–5 minutes per side. Remove and set aside.
  3. Add garlic and cook until fragrant.
  4. Add sun-dried tomatoes and cook briefly.
  5. Pour in cream and simmer.
  6. Add spinach and cook until wilted.
  7. Return salmon and coat with sauce.
  8. Simmer for a few minutes and serve.

Notes

  • Cook sauce on medium heat to avoid splitting
  • Do not overcook salmon
  • Add vegetables for variation
