Method
- Heat oil in a skillet over medium heat.
- Cook salmon 4–5 minutes per side. Remove and set aside.
- Add garlic and cook until fragrant.
- Add sun-dried tomatoes and cook briefly.
- Pour in cream and simmer.
- Add spinach and cook until wilted.
- Return salmon and coat with sauce.
- Simmer for a few minutes and serve.
Notes
- Cook sauce on medium heat to avoid splitting
- Do not overcook salmon
- Add vegetables for variation
