Creamy Chicken Alfredo Pasta

Ingredients
  

  • 12 ounces pasta fettuccine, penne, or linguine
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1/4 cup reserved pasta water as needed
  • Optional: chopped parsley for garnish

Method
 

  1. Cook pasta in salted water until al dente. Reserve 1/4 cup pasta water, then drain.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large skillet and cook chicken until golden and cooked through. Remove and slice.
  4. In the same skillet, melt butter and sauté garlic until fragrant.
  5. Add heavy cream and simmer gently.
  6. Stir in parmesan until sauce is smooth.
  7. Add chicken and cooked pasta to the skillet.
  8. Toss to coat, adding pasta water as needed.
  9. Adjust seasoning and serve warm.

Notes

  • Use freshly grated parmesan for best results
  • Don’t boil the sauce once cheese is added
  • Add pasta water gradually to loosen sauce
