Method
- Cook pasta in salted water until al dente. Reserve 1/4 cup pasta water, then drain.
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet and cook chicken until golden and cooked through. Remove and slice.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add heavy cream and simmer gently.
- Stir in parmesan until sauce is smooth.
- Add chicken and cooked pasta to the skillet.
- Toss to coat, adding pasta water as needed.
- Adjust seasoning and serve warm.
Notes
- Use freshly grated parmesan for best results
- Don’t boil the sauce once cheese is added
- Add pasta water gradually to loosen sauce
