Method
- Rinse rice under cold water until the water runs mostly clear.
- In a medium saucepan, combine rice, milk, sugar, salt, and cinnamon stick (if using).
- Bring to a gentle simmer over medium heat, then reduce heat to low. Cook uncovered, stirring often, for 30–35 minutes, until the rice is tender and the pudding is thick.
- Remove from heat and stir in vanilla. For extra richness, temper the egg and stir it in now, cooking for another 2 minutes.
- Let rest for 5–10 minutes. Serve warm or chilled with your favorite toppings.
Notes
If using leftover cooked rice, reduce milk slightly and cut cooking time to 15–20 minutes.
