Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/3 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F.
  2. Line an 8x8-inch baking pan with parchment paper.
  3. Add cottage cheese, eggs, vanilla extract, and honey or maple syrup to a blender.
  4. Blend until completely smooth.
  5. In a mixing bowl, whisk together cocoa powder, chocolate protein powder, baking powder, and salt.
  6. Pour the blended cottage cheese mixture into the dry ingredients.
  7. Stir until a thick brownie batter forms.
  8. Fold in dark chocolate chips, saving a few for the top if desired.
  9. Spread the batter evenly into the prepared pan.
  10. Sprinkle extra chocolate chips on top.
  11. Bake for 20 to 25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
