Ingredients
  

  • lbs boneless skinless chicken breast (or thighs), cubed
  • 2 cups cornflakes crushed
  • 2 eggs beaten (or ½ cup buttermilk)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Cooking spray or olive oil spray

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken with salt, pepper, garlic powder, and paprika.
  3. Dip chicken pieces into beaten eggs (or buttermilk).
  4. Press chicken firmly into crushed cornflakes to coat.
  5. Arrange on baking sheet and lightly spray with oil.
  6. Bake for 16–18 minutes, flipping once, until golden and cooked through.
  7. Cool slightly and serve warm with dipping sauces.

Notes

  • Do not crush cornflakes too finely
  • Spray lightly with oil for best browning
  • Flip halfway for even crispness
  • Best served fresh for maximum crunch
