  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg room temperature
  • 1/2 cup buttermilk room temperature
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water or hot coffee
Buttercream Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
Optional Toppings
  • Sprinkles
  • Chocolate curls
  • Mini chocolate chips
  • Cocoa powder

Method
 

  1. Preheat the oven to 350°F. Line a 12-cup muffin pan with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the egg, buttermilk, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently until combined.
  5. Slowly stir in the hot water or hot coffee. The batter will be thin.
  6. Divide the batter evenly between the cupcake liners, filling each about two-thirds full.
  7. Bake for 16 to 18 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. To make the frosting, beat the softened butter until smooth and creamy.
  10. Gradually add the powdered sugar and beat until combined.
  11. Add the heavy cream, vanilla extract, and salt. Beat until fluffy and smooth.
  12. Pipe or spread the buttercream onto the cooled cupcakes.
  13. Decorate with sprinkles, chocolate curls, or mini chocolate chips if desired.

Notes
  • Do not frost cupcakes until they are completely cool.
  • Hot coffee deepens the chocolate flavor but will not make the cupcakes taste like coffee.
  • For chocolate buttercream, add 1/3 cup cocoa powder to the frosting and increase cream as needed.
  • Store cupcakes in an airtight container at room temperature for 1 day or in the refrigerator for up to 4 days.
  • Bring refrigerated cupcakes to room temperature before serving.
