Ingredients
  

  • 1/2 cup cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips

Method
 

  1. In a small bowl, beat cream cheese, 1/4 cup sugar, and 1/2 tsp vanilla. Scoop teaspoon-sized balls and freeze.
  2. In a large bowl, cream butter, brown sugar, and 1/4 cup sugar. Add egg and 1 tsp vanilla.
  3. Mix flour, baking soda, and salt in another bowl. Combine with wet ingredients. Stir in chocolate chips.
  4. Wrap dough around frozen cheesecake balls to form stuffed cookies.
  5. Bake at 350°F for 10–12 minutes. Cool before serving.

Notes

  • Use mini chocolate chips for easier folding.
  • You can chill the cookie dough for 30 minutes if it's too sticky.
  • For extra flavor, sprinkle a bit of sea salt on top before baking.
