Ingredients
  

Dough
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/2 teaspoon salt
  • 2 large eggs room temperature
  • 1/2 cup warm whole milk
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter softened
Chocolate Filling
  • 4 ounces semi-sweet chocolate finely chopped
  • 1/4 cup unsalted butter
  • 1/4 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon optional
  • 1/8 teaspoon salt
Syrup
  • 1/4 cup granulated sugar
  • 1/4 cup water

Method
 

  1. In a large bowl, mix flour, sugar, yeast, and salt.
  2. Add eggs, warm milk, and vanilla. Mix until a rough dough forms.
  3. Add softened butter a little at a time and knead until the dough is smooth and soft.
  4. Place dough in a greased bowl, cover, and let rise for 1 to 1 1/2 hours, or until doubled.
  5. Melt chocolate and butter together. Stir in powdered sugar, cocoa powder, cinnamon if using, and salt. Let cool until spreadable.
  6. Roll dough into a large rectangle on a lightly floured surface.
  7. Spread chocolate filling evenly over the dough.
  8. Roll tightly into a log from the long side.
  9. Slice the log in half lengthwise.
  10. Twist the two halves together with the cut sides facing upward.
  11. Place the twisted loaf into a greased 9x5-inch loaf pan.
  12. Cover and let rise for 30 to 45 minutes.
  13. Preheat oven to 350°F.
  14. Bake for 35 to 40 minutes, or until golden brown and cooked through.
  15. While baking, simmer sugar and water for 2 to 3 minutes to make syrup.
  16. Brush syrup over the hot babka.
  17. Cool before slicing.

Notes
  • Warm milk should not be hot, or it can weaken the yeast.
  • Let the chocolate filling cool before spreading so it does not melt the dough.
  • Chill the rolled log for 10 minutes if it feels too soft to cut.
  • Brush syrup on while the loaf is still hot.
  • Cool before slicing for cleaner chocolate swirls.
