Ingredients
  

  • 1 sheet puff pastry thawed
  • cups cooked chicken diced
  • 1 cup sliced bell peppers
  • ½ cup sliced onion
  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning
  • ¾ cup shredded cheese cheddar or Mexican blend
  • 1 egg beaten (for egg wash)

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet.
  2. Heat olive oil in a skillet and cook chicken with fajita seasoning until lightly browned.
  3. Add peppers and onions; sauté until softened. Remove from heat and cool slightly.
  4. Roll out puff pastry and cut into even squares.
  5. Spoon filling into center of each square and top with cheese.
  6. Fold or cover pastry and seal edges gently.
  7. Brush tops with egg wash.
  8. Bake for 16–18 minutes until puffed and golden.
  9. Cool slightly and serve warm.

Notes

  • Let filling cool before assembling
  • Do not overfill pastries
  • Best served warm and fresh
  • Reheat in oven for flaky texture
