Ingredients
  

  • 2 cups cooked chicken breast chopped
  • 6 cups romaine lettuce chopped
  • 6 slices bacon cooked and crumbled
  • 2 hard-boiled eggs chopped
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup blue cheese crumbles optional
  • 1/4 cup red onion finely sliced
Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. Cook chicken until fully done, then let it rest and chop into bite-sized pieces.
  2. Cook bacon until crispy and crumble.
  3. Boil eggs for 9–10 minutes, peel, and chop.
  4. In a large bowl, add chopped lettuce as the base.
  5. Arrange chicken, bacon, eggs, avocado, tomatoes, onion, and cheese on top.
  6. Whisk dressing ingredients in a small bowl.
  7. Drizzle dressing over salad or serve on the side.
  8. Toss gently before serving if desired.

Notes

  • Use rotisserie chicken to save time
  • Add dressing just before serving
  • Keep ingredients chilled for best flavor
