Cheesy Stuffed Peppers

Ingredients
  

  • 4 bell peppers halved and seeded
  • 8 oz cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • Optional garnish: parsley or green onions

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare bell peppers and place cut-side up in dish.
  3. Mix cream cheese, mozzarella, cheddar, seasonings, salt, and pepper until smooth.
  4. Fill each pepper half with cheese mixture.
  5. Cover loosely with foil and bake for 25 minutes.
  6. Uncover and bake 10–12 minutes until bubbly and lightly golden.
  7. Rest briefly, garnish, and serve warm.

Notes

  • Add cooked protein or vegetables to make it more filling.
  • Use pepper jack for a spicy version.
  • Great base recipe for low-carb meals.
