Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ cup buffalo sauce
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber sliced
  • ¼ cup red onion thinly sliced
  • ½ cup shredded carrots
  • cup ranch or blue cheese dressing
  • 1 –2 tablespoons milk or water to thin, optional

Method
 

  1. Preheat grill or skillet over medium-high heat and lightly oil the surface.
  2. Season chicken breasts with salt, pepper, and garlic powder.
  3. Cook chicken for 5–6 minutes per side, or until fully cooked.
  4. Toss hot chicken with buffalo sauce until evenly coated. Let rest, then slice.
  5. In a large bowl, add chopped romaine, tomatoes, cucumber, red onion, and carrots.
  6. Add sliced buffalo chicken on top.
  7. Drizzle with ranch or blue cheese dressing and toss gently just before serving.
