Ingredients
  

  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 3 cups broccoli florets
  • 2 tablespoons olive oil for broccoli
  • 4 cups mixed greens or spinach
Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
Optional toppings:
  • 1/4 cup shredded cheese
  • 2 tablespoons nuts or seeds

Method
 

  1. Season chicken with spices, salt, and pepper.
  2. Cook until fully done, then rest and slice.
  3. Toss broccoli with oil, salt, and pepper.
  4. Roast at 400°F (200°C) for 20 minutes until slightly crispy.
  5. Add greens to a bowl.
  6. Top with chicken and roasted broccoli.
  7. Mix dressing and drizzle over salad before serving.

Notes

  • Don’t overcrowd broccoli when roasting
  • Let chicken rest before slicing
  • Add dressing just before serving
