Ingredients
  

  • pounds boneless skinless chicken breasts or thighs
  • 3/4 cup barbecue sauce thick style
  • 3 cups mixed vegetables potatoes, bell peppers, green beans
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Place chicken on one side of the pan and brush with barbecue sauce.
  3. Add vegetables to the pan, drizzle with olive oil, and season with salt, pepper, and paprika.
  4. Spread everything into an even layer.
  5. Bake for 20 minutes.
  6. Remove pan, stir vegetables, and brush chicken with more BBQ sauce.
  7. Return to oven and bake another 10 minutes, until chicken is cooked through.
  8. Rest briefly and serve warm.

Notes

  • Add BBQ sauce toward the end to prevent burning
  • Chicken thighs stay juicier than breasts
  • Great for meal prep and leftovers
