Method
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Place chicken on one side of the pan and brush with barbecue sauce.
- Add vegetables to the pan, drizzle with olive oil, and season with salt, pepper, and paprika.
- Spread everything into an even layer.
- Bake for 20 minutes.
- Remove pan, stir vegetables, and brush chicken with more BBQ sauce.
- Return to oven and bake another 10 minutes, until chicken is cooked through.
- Rest briefly and serve warm.
Notes
- Add BBQ sauce toward the end to prevent burning
- Chicken thighs stay juicier than breasts
- Great for meal prep and leftovers
