Ingredients
  

  • 2 large flatbreads or naan breads
  • ¾ cup cooked shredded chicken
  • ½ cup barbecue sauce divided
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup thinly sliced red onion
  • ¼ cup shredded cheddar cheese optional
  • 1 tablespoon chopped cilantro or green onions optional
  • ¼ teaspoon red pepper flakes optional

Method
 

  1. Preheat the oven to 425°F.
  2. Place the flatbreads on a parchment-lined baking sheet.
  3. For a crispier crust, pre-bake the flatbreads for 3 minutes.
  4. Toss the cooked chicken with 2 tablespoons barbecue sauce.
  5. Spread the remaining barbecue sauce evenly over the flatbreads, leaving a small border around the edges.
  6. Sprinkle half of the mozzarella over the sauce.
  7. Add the barbecue chicken and red onion.
  8. Top with the remaining mozzarella and cheddar if using.
  9. Bake for 8–12 minutes, or until the cheese is melted and the edges are crisp.
  10. Rest for 2 minutes, then garnish with cilantro, green onions, or red pepper flakes if desired. Slice and serve warm.

Notes

  • Use cooked chicken only, such as rotisserie chicken, grilled chicken, or leftover baked chicken.
  • Do not add too much sauce or the flatbread may turn soggy.
  • Pre-baking the flatbread helps create a crispier base.
  • Add jalapeños for heat or pineapple for a sweet contrast.
  • Reheat leftovers in the oven or air fryer for best texture.
