Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
Place salmon fillets skin-side down. Pat dry with paper towels.
Brush salmon with olive oil. Sprinkle garlic, Italian seasoning, salt, and pepper evenly over each fillet.
Drizzle with lemon juice and add lemon slices on top if using.
Bake 12–15 minutes, until the salmon flakes easily with a fork (thicker fillets may need 16–18 minutes).
Rest 2 minutes, garnish with fresh herbs if desired, and serve warm.
