Method
- Preheat oven to 425°F (220°C). Line baking sheet with parchment.
- Set up breading bowls: flour, beaten eggs, seasoned breadcrumbs.
- Coat mozzarella in flour, egg, breadcrumbs. Repeat egg and breadcrumbs.
- Place on tray and freeze 30 minutes until firm.
- Spray lightly with oil.
- Bake 8–10 minutes, flipping once, until golden.
- Rest briefly and serve warm.
Notes
- Double breading prevents cheese leaks
- Always bake from frozen
- Works great in the air fryer too
