Ingredients
  

  • 2 cups elbow macaroni uncooked
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 large egg beaten
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon melted butter for breadcrumbs
  • 1/4 cup extra shredded cheddar cheese for topping
  • Nonstick cooking spray

Method
 

  1. Preheat the oven to 375°F and grease a mini muffin pan well with nonstick spray.
  2. Cook the elbow macaroni in salted boiling water until just tender. Drain well.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  4. Slowly whisk in the milk and cook until the sauce thickens.
  5. Stir in the cheddar, mozzarella, salt, pepper, and garlic powder until melted and smooth.
  6. Add the cooked macaroni and stir to coat evenly. Let the mixture cool slightly.
  7. Stir in the beaten egg until fully combined.
  8. In a small bowl, mix the panko breadcrumbs with 1 tablespoon melted butter.
  9. Spoon the mac and cheese mixture into the mini muffin cups, pressing lightly.
  10. Top with the extra cheddar and buttered breadcrumbs.
  11. Bake for 18 to 22 minutes, or until golden on top and set around the edges.
  12. Cool in the pan for 8 to 10 minutes before gently removing. Serve warm.

Notes

  • Let the mac and cheese cool slightly before adding the egg.
  • Grease the muffin pan very well for easy removal.
  • Freshly shredded cheese melts better than pre-shredded cheese.
  • Let the bites rest before removing so they hold together properly.
  • Reheat in the oven or air fryer for the best texture.
